Catherine "Cathy" Sue (Findeisen) Eubanks

Catherine “Cathy” Eubanks, 72, of Grifton passed away on Sunday, May 14, 2023 at Vidant Inpatient Hospice in Greenville.

Cathy worked as a Customer Service Manager for Food Lion for 20+ years. She loved spending time with her family and her best friend, Pam. Her grandchildren were her pride and joy. Cathy could often be found cheering them on during sporting and other events. She always made Christmas special ensuring everyone received the perfect gifts and spent hours making lady fingers and peanut butter balls. She never met a stranger and enjoyed keeping up with others on Facebook. Cathy also enjoyed shopping, getting manicures, and attending church. She always had a positive outlook even during her illness, never wanting others to worry about her.

She is preceded in death by her parents, W.J. and Minnie Findeisen.

Cathy is survived by her husband of 55 years, Dalton Eubanks; daughter, Belinda Craft (Jay) of Grifton; son, Gary Eubanks (Annette) of Greenville; grandchildren, Matthew, and Skylar; sister, Sandra Thomas (Billy) of Carolina Beach; sister-in-laws, Jo Huettl of Kinston, Nancy Elden (Leonard) of Winterville and Pam Eubanks of Kinston; best friend, Pam Pfeil and her grandchildren, Mallory, James and Evelyn; close friend, Christine Casey.

Memorial service will be held at 6:00 p.m. Wednesday, May 17, 2023 at Garner Funeral Home.
